  1. Prepare the Base: Begin your kitchari by thoroughly rinsing 1/2 cup of mung dal and 1/2 cup of basmati rice under cool water. After rinsing, let them soak for as long as you can, preferably overnight—this aids in digestion—and then drain them well.

  2. Sauté the Spices: In a large pot, warm a tablespoon of ghee (or oil). Add the teaspoon of freshly grated ginger, 1/2 teaspoon of turmeric, and a pinch of black pepper.
